- Sear the seasoned chicken thighs in olive oil over medium-high heat, about 3 minutes per side. Remove and set aside.
- Cook the onion, carrots, and celery in the same pot for 5 to 6 minutes, then add the garlic for 30 seconds.
- Return the chicken to the pot, add the broth, bay leaves, and thyme. Simmer 15 to 18 minutes until the chicken reaches 165°F.
- Shred the chicken and return it to the pot.
- Add the egg noodles and simmer 6 to 8 minutes until tender.
- Remove the bay leaves, stir in the lemon juice, and season with salt and pepper.
- Serve topped with fresh parsley or dill.
Add the egg noodles only when you're ready to serve, or cook them separately, so they don't soak up the broth and turn mushy. Leftovers keep in the fridge up to 4 days, and the soup will thicken as it sits, so add a splash of broth when reheating.
