- Pound chicken to an even 1/2-inch thickness; season with salt and pepper.
- Set up flour, egg wash, and panko-parmesan mixture in three shallow dishes. Dredge each cutlet through flour, egg, then panko mixture.
- Fry cutlets in hot oil (about 350°F) for 3-4 minutes per side, until golden brown.
- Top each cutlet with marinara, mozzarella, and remaining parmesan.
- Broil for 3-5 minutes, until cheese is melted and browned and chicken reaches 165°F internally.
- Rest 2 minutes, top with basil, and serve.
Pat the chicken dry before dredging so the coating sticks and turns crisp. Fry in batches without crowding the pan, and keep the oil around 350°F so the cutlets brown evenly without soaking up oil. Broil the cheese on a rack or sheet pan to keep the bottom crust crunchy.
