Foolproof Chicken Salad

Ingredients
  

  • 3 cups cooked chicken shredded or diced
  • 1/2 cup mayonnaise
  • 2 tablespoons plain Greek yogurt or sour cream
  • 2 celery stalks finely diced
  • 1/4 cup red onion finely diced
  • 1/2 cup red grapes halved
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste
  • 1/4 cup chopped pecans or walnuts toasted (optional)

Method
 

  1. Shred or dice the chicken. (If using raw chicken, poach to 165°F and cool completely before shredding — do not mix warm chicken into the dressing.)
  2. Whisk mayonnaise, Greek yogurt, lemon juice, and Dijon mustard together in a large bowl.
  3. Add chicken, celery, red onion, and grapes. Fold gently to coat. Fold in nuts last if using.
  4. Season with salt and pepper to taste.
  5. Chill at least 20 minutes before serving.
  6. Fold in the nuts just before serving so they stay crunchy. Halve the grapes and pat them dry so they don't water down the dressing. It keeps in the fridge up to 4 days, and it's great in sandwiches, on croissants, or over greens.

Notes

Keep the finished salad refrigerated and out of the danger zone (above 40°F) for no more than 2 hours total.
