- Pat chicken dry; dredge in flour mixed with salt, pepper, and Italian seasoning. (Wash hands, dish, and surfaces after handling raw chicken before touching anything else.)
- Sear in olive oil over medium-high heat, 4–5 minutes per side, until golden. Remove to a clean plate.
- Sauté garlic in the same skillet 30 seconds. Add broth, scraping up browned bits.
- Stir in cream, sun-dried tomatoes, and red pepper flakes; bring to a gentle simmer.
- Whisk in parmesan gradually until smooth.
- Return chicken to skillet; simmer 6–8 minutes until internal temp reaches 165°F.
- Stir in basil, rest 2–3 minutes, and serve.
Pound the chicken to an even thickness so the cutlets cook at the same rate and stay juicy. Add the parmesan gradually over low heat, so the sauce stays smooth and doesn't turn grainy. Leftovers keep in the fridge up to 3 days, so reheat gently with a splash of broth or cream.
